Shannon Zemba, Owner

Originally from Streetsboro, Shannon’s love for food started at a young age. Growing up with her Sicilian Nana, she was introduced to the beauty of how delicious homemade meals, made with fresh ingredients can bring people together. Shannon later moved to St. Croix where she fell in love with the restaurant industry. She began working for McCormick’s, where she went through extensive training in several of their establishments. She then went on to work as a food beverage manager at the 4 star Buccaneer Resort.
In late 2010 home was calling and she moved back to Ohio to be closer to family and friends. She then began working at The Bistro on Main in Kent, and later as the General Manager for One Red Door in Hudson. Shannon currently resides in Kent with her husband Chad, their girls Rayanne and Katelyn, and fur children Luna, Kylo and Koti. As owner and General Manager of Over Easy Morning Cafe, Shannon looks forward to bringing together family, friends and the community, through great food and amazing customer service.

Chuck Crawford, Co-Owner & Chef

Originally from Connecticut, Chuck’s first job was at a breakfast place named Bickford’s Pancake and Family Fare, where he fell for all things breakfast. He then worked at a vegetarian restaurant named Clare’s Corner Copia, where he learned to cook with fresh herbs and chilies, a main component of his cooking today. While his dream was originally to be a rockstar, after moving to Ohio and marrying his wonderful wife Jess, he quickly realized he was a better cook than guitar player. They soon moved to Kent and had their twin girls Raven and Sage.

Chuck went on to serve as the chef at The Bistro on Main and later The Franklin Hotel Bar. As Over Easy Morning Cafe’s co-owner
& chef, he is looking forward to the opportunity to combine his love for fresh herbs and chilies with his favorite meal of the
day…breakfast!
